Stephanie Cornais

Educator, Writer, and Recipe Developer

Sunday Suppers

August 1, 2023 by stephanie.cornais |

You should see the three-ring binder I have been using to save and store my handwritten recipes for the last ten years! Bulging at the seams. It's been 10 years since I wrote and published my cookbook, From Your Freezer To Your Family. I'm finally ready to share again and in an effort to get back into the swing of writing and sharing recipes again, I decided to start a Substack

Teacher Scientist

August 1, 2023 by stephanie.cornais |

I have always felt more like a Teacher Scientist instead of a Science Teacher. Every summer I do some sort of professional development to help reinforce that approach to teaching and keep my skills fresh. In the summer of 2023, I attended a science teacher training at the Florida Geological Survey. This training was on my radar because I had previously reached out to Dr. Mabry

Rent the Runway, Europe Edition

August 7, 2022 by stephanie.cornais |

I realize showing my Europe trip outfits is super bougie, but fashion makes me happy and sharing outfit ideas is fun. Here are some pictures of my Rent the Runway outfits that I wore this summer while my family and traveled to the UK, France and Italy. I am so glad I had a RTR membership to help me pack for Europe without breaking the bank. With just a few RTR outfits, I felt

Ten Things To Do When You Are Feeling Stuck

August 7, 2022 by stephanie.cornais |

When you are feeling stuck, for whatever reason, it can be hard to get unstuck. Like Dr. Seuss says, unslumping yourself is not easily done. Then there is Newton's first law of motion to consider as well - this law is sometimes referred to as the law of inertia, and it says that an object at rest stays at rest, and an object in motion stays in motion with the same speed and in

Things To Do in Chamonix, France

August 1, 2022 by stephanie.cornais |

Chamonix, France is located in the Alps, near Switzerland and Italy. It is a haven for outdoorsy Europeans and a must visit if you are a serious hiker, trail runner, or mountain climber, and wonderful for families too! My family and I stayed a week in Chamonix, France in the summer of 2022, and it was one of the highlights of our Europe trip. London and Paris were awesome, but

Two beds this year! I thought it would satisfy me Two beds this year! I thought it would satisfy me to have two beds, but no, I just want more space to garden. Does anyone want to give me a farm?

I staked them up today and planted my beloved zinnias and roselle seeds. I’m STILL waiting on my poppies, but they coming along. In the meantime, I’m dreaming of tomato sandwiches on sourdough bread this summer!

Life lately. I got potatoes in the ground! Potat Life lately.

I got potatoes in the ground! Potatoes should go in around Valentine’s Day, but February kicked my butt and I was waiting to take over the garden bed next to mine.

My carrots and peas are coming up nicely, the mustard greens are still kicking, and my garlic got some extra nutrients as they enter the fattening up stage. My poppies have not bloomed-yet, but the coreopsis survived the freeze and is starting to put out new leaves. TBD if the African Blue Basil will come back.

I planted 24 tomato plants in my new bed today too! I’m pumped to now have almost 100 sq feet of space to grow vegetables.

My gardening class started last week, but if you missed it and need some support to get started, or have questions (and prefer asking human with expertise from hands on experience) doing a private consult with me is an option too!

Who needs the gym when you have a garden? This w Who needs the gym when you have a garden?

This weekend I added a couple of bags of @man.in.overalls Magic Mix (which I accidentally called Magic Mike when checking out at @cultivatejax 😂🤦🏼‍♀️) and I planted some more carrots and peas seeds. Winter is almost over and it’s time to get in the garden!

My gardening class starts next week! Link in bio.
Continuing to catch up. What an absolute joy it wa Continuing to catch up. What an absolute joy it was to grow Roselle last season! Roselle is also called Florida Cranberry, and it’s a special plant to grow if you live in the southeast.

It’s a three season plant. Starting in early spring, I planted seeds given to me by a friend. I cared for, and tended to, the plants all summer and fall. I enjoyed the blooms as much as the fruit! When it was harvest time, I decided to freeze some for tea making and I also made a huge batch of simple syrup for holiday gifts.

If you want to learn how to grow fruits and vegetables in Florida and the Southeast, check out my online class starting Feb 26th. Link in bio.
